Tried and True Banana Bread

I have tried several banana bread recipes and they have always failed. I have been disappointed so many times...unnntillll My best friend Amanda gave me this recipe and it is amazing. It turns out every time. I love to make the mini loaves and they are so cute and the perfect serving for one or two people! Banana bread is total comfort food and for me it is a reminder of my best friend Amanda who lives in Kentucky now! It takes me back to the place we used to live in Pleasant grove. To a phase in life that was totally different. A phase where my kids were just babies! It makes me miss it so much! Enjoy this banana bread and let it mean something new for you too!

 

Ingredients:

4 Ripe bananas

2 Eggs

1/2 cup margarine

1 cup sugar

2 cups flour

1 tsp baking soda

1/2 tsp salt

1 tsp vanilla  

Ingredients:

  1. Preheat oven to 350 degrees
  2. Mash bananas in a bowl.
  3. In a separate bowl combine the rest of the ingredients.
  4. Add the bananas
  5. Spray loaf pans, pout batter in 1/2-3/4 full and bake for 20 minutes then reduce heat to 300 and bake for an hour. This make 3-4 normal size loafs.
